Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 1/3 cup milk
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh blueberries
- 1/4 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- For the Lemon Glaze:
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
Instructions:
Preheat oven to 375F 190C
Grease an 8x8-inch baking pan
In a large bowl, combine flour, sugar, baking powder, and salt
In another bowl, mix melted butter, milk, egg, and vanilla extract
Add wet ingredients to dry ingredients and stir until just combined
Gently fold in blueberries and spread batter into prepared pan
In a small bowl, mix softened butter, sugar, flour, cinnamon, and nutmeg until crumbly
Sprinkle crumb mixture over batter in pan
Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean
While the buckle is baking, prepare the lemon glaze by whisking together powdered sugar, lemon juice, and lemon zest until smooth
Once the buckle is baked, let it cool for 10 minutes then drizzle the lemon glaze over the top
Allow the buckle to cool completely before slicing into squares
